I made this mousse one day when I had to take something to a dinner party but had very few ingredients. I can't stress enough how easy this mousse is to make. It's fricken dangerous. The only downside is the amount of time it takes to set. So, if you're craving an instant chocolate fix you're going to be disappointed. You'll have to plan this binge in advance. The thing I love most about this recipe is how rich you can make it depending on the type of chocolate you use. I used quite a dark chocolate but you could just as easily use milk or even white.
The longer you leave it to set the better so I would recommend whipping it up in the morning (it really is so quick) then just let the fridge do all the work. Come dessert time you can be all "here's something I prepared earlier". I've always wanted to say that.

Ingredients
- 2 medium eggs
- 60 g chocolate (at least 70% cocoa)
- 2 tsp sugar (or to taste)
- Break the chocolate into pieces and put in a bowl over, but not touching, a pan of simmering water. When the chocolate begins to melt, turn the heat off. Separate the eggs
- Whisk the egg whites into soft peaks, add the sugar, and whisk briefly.
- Mix the egg yolks quickly into the melted chocolate and then whisk in a third of the egg white. Fold the rest very gently into the mixture until just combined (be careful not to overmix), and then put into bowls and refrigerate for at least four hours until set.
